COLD SESAME NOODLES
Combine 1 c chunky peanut butter with ½ cup soy, 6 tbsp dark sesame oil, ¼ c rice vinegar, 4 tsp sugar, 2 tsp chili paste with garlic, and add ½ cup hot water, 1 tbsp at a time until well blended.
Add 1 lb drained, rinsed rice noodles, ¾ c minced green onions and toss until noodles are well coated. Garnish with chopped peanuts and serve at room temperature. Serves 4 |
